What You’ll Need

Below are the essential ingredients for this Stove Top stuffing meatloaf recipe. It’s the perfect shortcut recipe to save you time when you’re too busy to cook.

  • Ketchup: I add ketchup to the meatloaf for sweetness and moisture. I spread it over the top before it bakes as well.
  • Eggs: The eggs help bind the meatloaf so it holds its shape. They also add moisture.
  • Stove-top stuffing mix: The stuffing mix works with the eggs to bind the ingredients together and adds tons of flavor.
  • Ground beef: I use 85% lean ground beef for the perfect amount of fat so it doesn’t become greasy as it cooks.

How to Make Stove Top Stuffing Meatloaf

All you have to do is mix, shape, and bake this meatloaf. It’s so incredibly easy! Prep only takes about 10 minutes and then the oven does the rest of the work.

  • Prep the oven and pan. Preheat your oven to 350 degrees F and grease a 9×13 baking dish with nonstick cooking spray.
  • Combine eggs and water. Add the eggs and water to a large mixing bowl. Whisk the ingredients until they are well combined.
  • Add the remaining ingredients. Combine the egg mixture with the stuffing mix, ground beef, and ¼ cup of ketchup. Ensure your hands are clean and then mix all of the ingredients until they are well incorporated.
  • Shape it and add ketchup. Place the meatloaf mixture into the prepared baking dish and shape it into a loaf. Then, brush the remaining ketchup on top of the meatloaf.
  • Bake. Put it into the oven and bake it for about 55 minutes.
  • Cool and serve. Allow it to cool for at least 10 minutes before slicing it. Enjoy with your favorite side!

Tips for Success

  • Don’t overmix the beef. Only mix the ingredients until they are well combined. If you overwork the meat, the meatloaf will become tough.
  • Try adding pork or turkey. For a different flavor profile, replace half of the ground beef with ground pork, chicken or ground turkey.
  • Pan. I prefer to shape the meatloaf mixture and place onto a baking sheet, but feel free to use loaf pans.
  • Variations. Instead of ketchup, use bbq sauce. For a sweeter glaze, all 2 tablespoons brown sugar to the 1/4 cup ketchup before brushing it over the meatloaf.
  • Additions. You can add chopped veggies like onions and bell pepper if you prefer.

Proper Storage

  • Storing in the Fridge. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat a slice, microwave it for 1-2 minutes or until warmed through.
  • Freezing. You can freeze it tightly wrapped for up to 4 months uncooked or up to 3 months cooked. Another option is to freeze individual slices. When ready to use, defrost the slices in the fridge overnight before baking.

My go to recipe for comfort food. I add a grated onion to the recipe and 2 tblsp Worstershire sauce for extra flavor.

  2. Bbq sauce is better with the stovetop stuffing mix. I’ve been making this recipe but with bbq sauce (no ketchup) for the last 20 years everyone loves it! Friends and family always ask how to make it

By far, this is my favourite meatloaf recipe I’ve tried! I doubled it as hubby and his dad asked if I could make them to go meals for their shifts on the road!!!!

  5. Could you use a bread loaf pan to cook this? Seems weird to put in a 9 X 13 dish if you are shaping it into a loaf anyhow.

My family loves this recipe. I cook it all day in crock pot on Low temp. Dinner waiting when we get home! Usually mix all ingredients, refrigerate mixture overnight, put in crock pot and brush with ketchup on top before leaving home in the morning,

Very good recipe. My usual throw it together meatloaf has diced bell pepper and onion, but I wanted to try this first just as written before “tweaking.” We quite enjoyed the simplicity of this recipe. It is now my “go to” recipe which can be thrown together quickly. I’ve discovered that I prefer to use low sodium chicken Stove Top Stuffing for the most balanced flavour and more ketchup than called for. I don’t measure ketchup when it comes to meatloaf, though I do try to stick somewhat to what is added to the actual recipe itself. As for topping the meatloaf with ketchup before going into the oven, I go for a completely covered loaf. When ground beef is at a price where I don’t feel I need to mortgage the house, I will make 2-3 meatloafs at a time to freeze, leaving the ketchup off the outside until right before baking. I will defrost in the fridge overnight until soft, cover with ketchup and bake as usual. Even though there are just the two of us, to me the whole purpose of making meatloaf is for the leftovers to make meatloaf sandwiches!

    1. Hi Beth. I haven’t tried that but you should be able to cook in the crockpot with no issues. I would line the crockpot with foil and then cook for 6 hours on low. Make sure the internal temp of the meatloaf reaches 160.

    1. Hi Patricia. The internal temperature should be 160°F when a thermometer is inserted into the center.

  9. At the very top of this recipe it says one pound of ground beef but when you go to jump to recipe it says two pounds what’s that about
